Chili-Rubbed Chicken with Black Bean and Corn Relish

This is my idea of a delish summer dinner- simple and so good! I've really gotten into grilling lately, and when the weather is nice, there is nothing better than grilling up some chicken and enjoying it with fresh veggies and maybe a glass of cold white wine. That's what I did tonight and boy, was it a treat! I like to use the bone-in chicken breasts because the packages of them are always a great deal at our local market. They also have so much more flavor than their boneless, skinless counterparts. The skin really keeps the meat moist during cooking, and if you don't care for the skin, you can always remove it after cooking. Because I used skin-on breasts, I didn't have to add any extra fat (oil or butter) to get it ready for grilling- just a blend of smoky spices that gave the meat great flavor. Here are some good tips if you've never grilled bone-in chicken before. To complete the meal, I fixed some cilantro rice and black bean and corn relish. The relish used all of the super fresh veggies I had on hand and the flavors paired so well with the chicken. If I had to do it again, I might have served some margaritas instead of the wine, but all in all, it was a great meal!

Chili-Rubbed Chicken Ingredients:
2 Tbs. brown sugar
1 Tbs. chili powder
2 tsp. cumin
1 tsp. kosher salt
1/2 tsp. paprika
1/2 tsp. oregano
4 bone-in, skin-on chicken breasts

Directions:
-Combine first six ingredients in a small mixing bowl.
-Rub chicken with the spice mix and allow chicken to sit for an hour or so prior to grilling. You may not need all of the spice mixture.
-Heat grill to medium. Be careful with the temperature as a too-hot grill will scorch the chicken.
-Place chicken skin side up on the grill and cook, turning once, until the internal temperature of the chicken is 165 degrees.

Relish Ingredients:
1 1/2 cups cooked black beans
2 cups diced tomatoes (1 large or 2 small)
4 ears grilled corn
1 medium green pepper, diced
1/2 red onion, diced
3-4 Tablespoons fresh lime juice
1 teaspoon white wine or white balsamic vinegar
1/3 cup minced cilantro
1/4 teaspoon ground cumin
Salt and black pepper, to taste

Directions:
-Combine the beans, tomatoes corn, green pepper, and onion in a mixing bowl.
-Stir in the lime juice, vinegar, cilantro and cumin.
-Season to taste with salt and pepper.
-Cover and chill until needed.
